Pay the final amount (approximately $639) when your lamb is ready. The expected wait is typically 2-4 weeks. You will be provided an estimated timeline after your deposit.

Our sheep are raised on the rolling pastures of western North Carolina foothills where they are provided a constant supply of fresh, high-quality "salad" to produce delicious and nutritious lamb. We partner with a handful of like-minded farmers to help raise enough lambs in a regeneratively manner.

After slaughter, we hang our lamb for a minimum of 5 days which achieves an excellent level of tenderness without excessive moisture and trim loss associated with long aged lamb.

Your lamb share includes:

  • 25%-30% steaks such as Rib Chops and Loin Chops
  • 30%-35% savory cuts such as Arm Roasts, Leg Roasts, and Ribs
  • 40%-45% premium ground lamb in 1-pound packs
  • Optionally
    • knuckles and other premium soup bones
    • Organs and variety meat such as tongue, liver, heart, kidneys, and spleen

Deposit:

Your deposit for a half lamb share is just $379. This is a non-refundable deposit. Your final payment (estimated around $639 based on an average of 40lbs of lamb) will be calculated once the lamb is processed.

How it works:

You reserve your share with a deposit online. We go to the pasture, select the healthiest, fattest lamb available and then butcher it with old-world craft and care in our shop. Once ready and the final payment is made, you can pick up or have us ship your excellent lamb. We won't leave you stranded after the purchase - you're part of the family now! Packaging:

All cuts are vacuum sealed and labeled.

Freezer space:

General rule of thumb: you need approximately 1 cubic foot of freezer space for each 30-40 pounds of frozen meat. For a whole share, plan for approximately 1-2 cu. ft. You can easily fit this meat in your regular freezer/fridge combo.
