Our heritage pigs are raised on a mix of open and wooded paddocks so that they can enjoy a diverse diet of plants, roots, fruits, nuts, and bugs. We provide an organic soy-free feed ration to supplement their forage. You can't buy this pork in stores. These pigs pack a nutritional punch that just can't happen with confinement-raised commercial pork.
After slaughter, we hang our pork for 4-6 days, which achieves delicious tenderness and just enough moisture loss to enhance the flavors.
Your pork share includes:
- 25% Rib Chops and Loin Chops
- 35% savory cuts such as Shoulder Roasts, Ham Roasts, Belly
- 40% mix of plain ground pork and seasoned sausage (we'll ask you what you like)
- Optionally
- knuckles and other premium soup bones
- organs and variety meats such as tongue, liver, heart, spleen, kidneys
Deposit:
Your deposit for a whole pork share is just $939. This is a non-refundable deposit. Your final payment (estimated around $1169 $1379 based on an average of 160lbs of pork) will be calculated once the pork is processed.
How it works:
You reserve your share with a deposit online. We go to the pasture or woods, select the best pig available and then butcher it with old-world craft and care in our shop. Once ready and the final payment is made, you can pick up or have us ship your excellent pork. We won't leave you stranded after the purchase - you're part of the family now! If you have any questions or want ideas about how best to enjoy your pork, we're here for you.
Packaging:
All cuts are vacuum sealed and labeled.
Freezer space:
General rule of thumb: you need approximately 1 cubic foot of freezer space for each 30-40 pounds of frozen meat. For a whole pork share, plan for approximately 4-6 cu. ft. You'll need the entirety of the freezer on a fridge/freezer combo or two shelves in a standalone freezer.
